To all you ladies looking for fast recipes that are low carb- I made this the other night- just finished eating it for lunch today too.

I got a pack of boneless chicken breasts and then I pounded the sh*t out of them to make them thin.. (by the way- IMO I think the pounded ones are more tasty & tender than the breasts you can already buy thin)..

I marinated them in fresh rosemary, olive oil, garlic powder, salt & pepper and balsamic vinegar for five minutes.

while these were marinated I cut up an eggplant and some mushrooms. Mushrooms into halves and eggplant into cubes w. skin on. I coated w. EVOO (LOL), salt & pepper and some more rosemary, and roasted in the oven at 450
This takes about 20 minute.

After eggplant was in oven for 10 minutes I cooked breasts on heated cast iron skillet (about 2-3 minutes per side).... SO GOOD and SO QUICK.
