Sloppy Seconds, Anyone?? *wink*

I've been noticing lately that I've become quite good at making leftover food into other, completely different meals. I thought it might be fun for all of us (or at least those who love to cook) to share some ideas for initial meals and then what we can do w/the leftovers. Here's a few that I have created:

Sloopy Joe's can become Taco Salads...add some chili powder to the meat, lettuce, diced tomato, chopped black olives, shredded cheese, (insert ingredient of your choice) and top w/a tomatoe vinagrette or salsa fresca and sour cream.

Marinated London Broil can become Steak Fajita Quesadillas....slice leftover LB very thin, saute some slivered onions, red and green bell peppers (set aside), then grill a lightly butters tortilla in a fry pan....add shredded cheese of your choice, onions/peppers and meat, fold and grill both sides...serve w/salsa and sour cream garnish.

Meatloaf can become Salsibury Steak (simply slice leftover meatloaf and heat in fry ban w/beef gravy) or Beef Stroganoff...slice leftover meatloaf and heat in fry pan w/cream of mushroom soup and some milk. Serve over No Yolks noodles.

Claud your very nice to Jeff. When we get home at 7pm and there are leftovers I am thrilled. That means no cooking for me that night, even though I love to cook I am so darn tired. Scott has to eat his left overs as is
-Meatloaf on Monday is re-heated Meatloaf on Tuesday
-spagetti sauce over angel hair pasta one night is spagetti sauce over ziti another night.

Grilled chicken cutlets can be a great topping for a salad for lunch!!!

Michele you cracked me up! That is the same in our house, pasta with sauce becomes, WOW, pasta with sauce...no time for that creativity!!! I wish I did though.

I love to cook and do so most nights, but then other nights I invite DH to the all you can eat smorgasboard in our fridge. It is like a littel game. Everyman for himself! Survival of the fittest! But seriously, we do a lot of tacos in my house and we tend to eat all the tortillas and are left with the rest of the fixins. I love to put it all together in a bowl( meat, black beans, rice, cheese, tomatoes and salsa and mix it togehter and it is delicous (if you are a beans and rice kind of person).

Cute thread! I may get some great ideas. I love to cook and be creative.

I usually overcook (learned from my mommy) but DH tends to eat whatever is leftover. He is a human garbage pail so we rarely have leftovers. But when I do I am usually not as creative as you Claud. I am more like Michele..guess cooking at 8pm does it to ya! We eat at 9pm every night.

I am not much of a leftover eater anyway so I guess that's ok. But DH will but anything leftover on a tortilla. He thinks anything possible can go on a wrap (and I mean anything)..you should see some of his creative dinners!

OMG...I thought my DH was the only man that was wrap obsessed!! He will put anything in a wrap!! hysterical!!
Has your DH ever made the scrambled eggs, cheese and bacon breakfast wrap??

sha-yep - if I'm not home to cook dinner - it is something on a wrap. Anytime he goes food shopping he always buys wraps. He made an omlette (egg and cheese) this week and put it on a wrap. This is dinner mind you. His favorite is a whole can of beans heated with jack cheese on a wrap. It sounds normal but you have to see how it is prepared - looks horrible. I have to say the one I liked was left over pepperoni and cheese - warmed on a wrap. yummy.

Im no that good of a cook...but here are 3 things I do with leftovers...


**left over hamburgers...I slice them refry them in a pay with spegetti sauce and put over rice...


**left over rice or meat...you can make fried rice...onions, peas, chopped up meat/any kind - all in the frying pan and then fry with rice...add soy sauce (little at first...add to taste) and then add scrambled eggs

**potatoes...fry potatoes add green beans and mozzerella cheese...or hash bowns

Leftovers? What are they? I haven't had anything leftover since I moved in with my hubby. LOL!! Like Niecey said, I'm married to the human garbage pail. Which kind of ****s because I loved taking leftovers for lunch!!

Cute thread !

My husband is a spoiled brat who rarely wants leftovers !

Growing up, my mom overcooked SO MUCH (enough for the whole block !) that we were so used to leftovers... It actually gets better every time !! LOL. But with the size of my family 1 nite of leftovers usually cleaned it up !

So since DH is a finnicky eater, I usually dont overcook if possible. I have to remind him and fix up lunch for him, that blue moon day that it happens.
But if we do have leftovers, lets say steak or chicken. Add it to pasta and add oil, cheese, garlic.
OR add to rice and add teriyaki sauce.

Thats all I can think of right now !
OK, now im starving !

Just so you all don't think I'm Betty Crocker - none of these take very long to do...in fact, probably about as long as reheating your leftovers....so, it's fun to eat something a little different every night instead of the same old thing.

Lately, I'm finding that it's easier to cook more than enough for two and have the leftovers to be creative with. It's not as involved to make something w/leftovers as it is to cook a whole meal.

Here's another...Grilled Chicken can become a grilled chicken ceasar salad, or a Chicken Pot Pie...dice up chicken and put in a casserole dish w/a bag of frozen mixed veggies and a can of cream of chicken soup (with some milk added for moisture). Mix some Bisquick and top the chicken mixture. Bake for 35 minutes....yum!

I just thought of another good one -

Mashed Potatoes can become Potato Pancakes...with mashed potatoes in a mixing bowl, add breadcrumbs and some flour slowly until the mixture is not as moist. Optional to add some finely chopped scallions. Shape into pancakes and fry in canola oil until golden brown. Serve w/applesauce and/or sour cream.

I love these ideas but re-heat and serve is sooo easy when I am tired. I need to be a Stay At Home Wife.
