Menu of the week
Well, sort of. We will only be here monday through thursday b/c we have an out of town wedding next weekend.
Anyhow, here are 4 entrees i plan to make this week:
Monday: Spicy Honey brushed chicken with roasted potatoes
Tuesday: Philly Cheese steak sandwiches
Wednesday: Oven fried chicken with mashed potatoes and green beans
Thursday: faux-ffalo chicken salad ( morningstar vegetarian chicken nuggets that we slice and coat with buffalo sauce, then pan-fried with a little cooking spray and serve mixed in a salad- with blue cheese dressing of course)

mmm sounds great!
I'm making pulled pork sandwiches for tomorrow (love the crockpot). Recipe is for 8 servings so that should carry us to at least Wednesday. If it's good I'll post it!

sure! i'd love to share! i havent tried the honey spicy chicken yet however here it is:
Ingredients 2 teaspoons garlic powder 2 teaspoons chili powder 1 teaspoon salt 1 teaspoon ground cumin 1 teaspoon paprika 1/2 teaspoon ground red pepper 8 skinless, boneless chicken thighs ( i might just use chicken breast- boneless thighs freak me out for some reason) Cooking spray 6 tablespoons honey 2 teaspoons cider vinegar Preparation Preheat broiler. Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.
Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.
Yield 4 servings (serving size: 2 chicken thighs)
