Hey guys I thought it would be helpful to post our fave diet meals and snacks!!! UMMMMMM I have none but Ill work on getting one for this post

I have a few-well lower cal. I will have to check my at-home comp.

Um what did I make the other day that was lower cal but good. Stuffed peppers-no rice. Just sue extra lean ground turkey and a little turkey sausage for kick. I mix it with tomatoe paste, onions and diced tomatoes, cook it up then stuff the blanched peppers and sprinkle lil bit of cheese on top. I have a good veggie lasanga recipe too. I know its pasta but the new muiltigrain stuff isnt bad.

I have a really good shrimp ceaser salad recipe and one for green beans with almonds which I pour grilled shrimp (cone in the boriler with a lime and corona beer "sauce."

OOO i forgot the shrmp etoufee recipe I have! MMMMM they say sue crawfish but I do it with shrimp-have to find it. havent made it in awhile-it was in the back of my BEST BODY magazine. They have great recipes in the back.'


I got stuff heh. I'll find it. Anyone have preffernces of chicken./fish etc?

AWESOME thanks Petey I wish I could eat shrimp but Im very allergic Great ideas though! I love stuffed peppers I need to try that one.....ANy others girls?????/

I'm copying and pasting my response to the 'unhealthiness' thread. DH and I concluded it's all about eating a lot of veggies, avoiding restaurant food, and limiting carbs. Fat is ok in moderation.... especially olive oil... Low fat cheese is a great addition, so you don't feel like you're missing out.... we cook HUGE dishes, and eat leftovers for lunch and some dinners. It cuts down on kitchen time

so here's my post from last night:

I have sooo many fairly quick dishes that are high in veg and low in carbs.... and very yummy. You only have to invest in some spices, and life will be good.

sher's mexican food
(enough for 6 servings... perfect leftovers!)
1.2 lbs ground sirlion
4 green peppers, diced into fairly large pieces
1 giant onion diced
2 packs sliced raw mushrooms
1 16 oz can of your favorite goya beans-drained
6 oz can plain tomato sauce
1T ground cumin
1t ground corriander
1t to 1T (to taste) cayenne
2T chili powder
1/2t smoked paprika (in latino stores)
salt
canola or olive oil
6 oz shredded low fat cheddar (from bag)

Fry up mushrooms until slightly browned, and transfer into a large serving bowl (meanwhile prep other veggies). Fry up onion... add to bowl. Fry up peppers... add to bowl. Add a bit more oil, and fry beans. Transfer to bowl. Add a tad more oil, add all spices and meat. Break up meat and fry until cooked. Then pour in tomato sauce. Once everything has simmered a couple minutes, pour over the veggies. Add cheese, and stir everything up.

low carb, low fat and very tasty!

Greek salads are fairly fast lunches to make, and very good for you (tomato chunks, pepper, cucumber, onion, good feta, kalamata olives, oregano and olive oil sprinkled on top)

Frozen chopped spinach is great to have around. I thaw it for eggs, pasta sauce, or soup.

(for soup, just sautee a diced onion in a bit of butter until clear, add cayenne, tumeric, and a dash of cumin. Then add chicken broth, thawed spinach and let perk on the stove. After about 15 min, add a dash of cream. yummy, not too bad for you, and literally 5 min of active cooking time.

frozen veggies are great in a pinch. Pour out what you need, nuke, and make a nice sauce for them.

Also, we cut up a head of cauliflower and broccoli, and nuke for16 minutes. I make a lowfat cheese sauce to dribble on top. (Sautee onion in butter, sprinkle flour to make a roux, then add milk. Once thickened, drop in some shredded lowfat cheddar. add salt and le voila!)

All these things we make midweek, and then eat leftovers for a couple days. It really isn't too bad eating reasonably healthy. And it tastes pretty good too
