Gotta say, I'm good! LOL
Not to brag or anything, but I just whipped together a masterpiece of a dinner in less than a half hour! I prepared and cooked it in no time! I made brown rice with chicken, onions and garlic and broccoli.....you should see this, it's a work of freakin' art! lol It's yummmmmyyy too!!!!

seriously, I dont get out until 5:30, won't be home until almost 6:30. By the time I stop at the store, get home and then cook, we don't usually eat until almost 8.

K here it goes:
Boneless/skinless chicken breasts
Brown rice ( I suggest Minute Rice)
Broccoli (frozen if you are in a hurry like me!)
Onion (one nice sized-onion)
1 garlic clove
Spices:
Pepper/salt
Oregano
Sage
Hot red pepper flakes (if you are spicy like me! lol )
Lemon juice
So here's what I did and it was super fast!
1-Put on a pot with water for the rice and water for the broccoli while preparing the chicken. Also put some olive oil (just enough to thinly coat the pan) in a pan over medium heat.
2- Cut a whole onion into thin-medium slices. Mince the garlic clove. Throw into the oil..it's warm by now!
3- I always like to season my onions and garlic opposed to my chicken, when making a fast dish like this. Baking is different..you need the coating then! Anyway, put a dash of salt, some pepper to your liking, red pepper if you like (a TINY bit for a little zing), a pinch of sage and a shake of the bottle of oregano.
4-Cut your chicken into strips and then cut the strip in half..this helps save cooking time.
5-Your water for your rice and broccoli is ready..put those on...Minute Brown rice is awesome..takes a matter of minutes! Frozen broccoli takes just as long...great fast food! These will be ready for you just in time for the chicken!
6- Sautee the onions and the garlic with the spices....squeeze some lemon over it (I used the Real Lemon in the bottle.....I squirted enough to make it over all the food and stopped..too much is an overkill!!!).....make sure you stir it all up to coat it all with the olive oil. Add the chicken and mix it all up. Keep mixing until the chicken is done. I wouldn't put the flame up higher than 3/4 of the way....if you do it too high the outside of the chicken dries out!
7- Drain the broccoli and add it to the frying pan with the chicken. Stir it all up, sizzle it up and put over rice. Enjoy!!!!!!

I'm so jealous.
I remember when I worked the job that got me through Undergrad days.....I would work 8-12 and then 3-7 on Mondays, Wedensdays and Fridays. As much as I love the job and my bosses, I HATED being there until 7...that was my motivation to get out of school fast and get my career going!!!!
