2/3 cup butter 2/3 cup flower 7 cups milk 4 large potatoes baked and peeled 4 green onions, thinly sliced 10-12 strips of bacon, cooked (I use the precooked, it's easier for me) 1 1/4 cups shredded cheddar 1 cup sour cream 3/4 tsp salt 1/2 tsp pepper
Melt butter. Stir in the flower slowly, adding a little at a time (so it doesn't get lumpy) until smooth.
Gradually add the milk, until thick. (DON'T let it boil, but, I usually cook it for a couple minutes here)
Add potatoes and onions and then cook to a boil.
Lower heat, cook 10 minutes.
Add remaining ingredients, (with the exception of a little bit of cheese and bacon, which you will use as a garnish when you put the soup into a bowl)and cook until cheese is melted.
**You can omit onions, I hate green onions and I use very few, because FH likes them.
**If you're not a fan of bacon, you can omit that, too.

I've never made this but I swear by this website because they give reviews of people who have tried the recipe. Here is one I found for a potato soup crock pot recipe
