Post your favorite "Easy Dinner" recipes

Help!!!! I need easy dinner ideas now that FI and I are living together. He doesn't know how to make anything other than soup!!! Anybody have any quick and easy dinner recipes??

Really easy...............pasta(ziti ir whatever) with Parma Rosa sauce, it's made by Knorrs & is in a package near gravy & soup mixes-it takes 5 minutes & it's really. You can add chicken or sausage too.
Don't forget the bread & salad, now I'm hungry!

Here's an easy, tasty chicken dish. Don't be put off by the long list of ingredients. Just keep the herbs on hand then measure all of the dry ingredients into a small bowl before you start.

Ingredients:

2 Tablespoons butter or margarine
1 Tablespoon finely grated fresh onions (or dried onions)
1 clove of fresh garlic - crushed
1 teaspoon of dried thyme leaves
1/2 teaspoon each of salt and black pepper
1/2 teaspoon dried rosemary
1/4 teaspoon ground dried sage
1/8 teaspoon dried marjoram
Dash of hot red pepper sauce
4 skinned and boned chicken breast halves

Heat the oven to 425º F.

In a shallow baking dish, melt the butter (I just put the butter in the baking dish and put it in the oven for a few minutes)

Mix in the rest of the ingredients above (except the chicken)

Put the chicken breasts into the mixture and turn them over a few times to coat well with the mixture.

Bake, uncovered, for about 15-20 minutes, basting with pan juices occasionally. It will start to brown a little - if you prick the chicken with a fork the juices will run clear.

Make extra and refrigerate the leftovers - chop up fine and mix with mayo for a GREAT chicken salad sandwich.

And here are some good supermarket options

I think the brand is Dominex - they make a frozen breaded eggplant that is pretty good - use it to make eggplant parmesan by adding sauce and mozzeralla cheese.

Mrs. Budd's makes a good chicken pot pie - usually find them in the meat section - down by the hams and other packaged meat products.

Open face sandwiches are good too - get a French or Italian bread, slice lengthwise and layer with your favorite deli meats, cheeses, tomatoes - heat in the oven on a cookie sheet or foil to catch drips.

See I would love to share, but I can never give the ingredients like the way it is listed in a cook book I just cook the way my grandma taught me, a litlle a dis a little a dat etc etc. But it is definitely my favorite Baked salmon, quick and dirty.

shamma, i thought i was the only one that cooked like that , lol. thats the best way to be taught, by eye.
my mom cooks like that, and when people ask her how much of "this or that" she puts in the ingredients, she responds in her broken English accent, "oh, aya dono, amma sorree"

Anna -- that's the way my grandma talks ... that's to funny!

Chicken fajitas are easy and fun -- we usually grill the chicken on the George Forman, use a bag of frozen peppers, add some cheddar cheese, sour cream and salsa! Don't forget the fajitas and it's one easy meal!

We used to eat beef & noodles

Brown a package of ground beef in a fryng pan. Drain the grease. Add:

can of tomatoe sauce (15 oz)
can of beef gravy (15 oz)
little salt, pepper and oregano

Mix and keep warm


In a seperate pot make a batch of wide egg noodles.

Mix the noodles and beef mixture and serve.

So simple and tastey!

My quick dinners include steak, lamb chops and pork chops. All cook in 30 minutes or less and so simple. Just stick it in over or broiler and flip

My DH loves Shake and Bake Pork Chops. He wouldn't eat it at first (he thought it was like Hamburger Helper) but once he tried it he loves it. Buy boneless pork chops wet them and drop them in a bag with shake and bake mix and bake for a half hour! You can use chicken too.

I have a great risotto recipe too at home and can be made in about 30-40 mins and is soooo yummy....I will have to post it.

For salmon, I like to bake it in the oven for a little then stick it in the broiler for a few minutes to brown it slightly. Top with a a chopped mango, pineapple and tomato mixture (maybe a little olive oil and cilantro if I have it) and sooo good...quick and healthy.

Oh for quesadillas - I like corn and zucchini. I am another who will do it by sight and taste - so bear with my instructions -

All at low-medium heat - In a frying pan, I slightly heat flour tortilla shells. Melt a little bit of butter in teh pan and put one torilla in the pan and add some shredded cheese, corn and diced green zucchini or yellow squash or both. Top with more cheese. Cover with another warmed tortilla. I let hest for a little and flip. I may cover for a few minutes until the cheese melts. Put on a plate with sour cream and maybe salsa.

You may want to saute the zucchini or squash or heat the corn slightly before putting it in the quesadilla.

Hope this makes sense!

Jsut beware ofthe pasta pounds...my first year living with my DH we both gained alot from eatin pasta....

Ok really easy dish....

take 1lb ground beef or turkey
2 egg whites
1/2 cup bread crumbs
1/4 BBq sauce

Combine the meat, egg whites and breadcrumbs.
Then add half the BBq sauce
Mix together and put in a loaf pan and cover with the rest of bbq sauce and cook at 350 for 20 min...
total time about 25 min...serve with potatos(microwave them) and veggies....

Also you can take a box of instant stuffing and 4 chicken cuttlets (very thin or pounded)
Make the stuffing according to the package and add raisins if you like take the chicken cutlets and place about 1/4 cup of stuffing and roll it and place in cass dish. repeat with all 4 cutlets...Bake for 30 min at 350....this I make on Sunday and cook an tuesday.....

For salmon I bought KC masterpiece Lemon pepper marinade and I put it on salmon and then add a little lemon, fresh herbs, Mrs. Dash etc and either forman grill it or bake and then broil it.
Sometimes I buy deli roast beef or turkey and nuke it with gravy and make stove top stuffing and bagged salad. I also make Manwich (sloppy Joes), beef pasta hamburger Helper (7 points in 1 cup in Weight Watchers)
Goulash-

Beef stew meat
2 small cans of tom sauce
salt and pepper to taste
handful baby carrots
diced onion
paprika to taste
Brown meat in pressure cooker dump in all ingredients add water to cover, pressure cook 18-20 min and serve over wide noodles.
Enjoy!
