recipe: Dinner Fritatta

I just love this recipe, and it's especially great bc you can incorporate items that you have in your fridge that you may want to use up

ingredients:

6 eggs OR 3 whole eggs, and 3 whites

Pam cooking spray

veggies of your choice ( I like mushrooms/onions/spinach and broccoli)

1 can of diced italian tomatoes

goat cheese OR mozzerella OR shreedded anything

splash of milk

3 dashes of dried dill

Croutons

Sautee all of your veggies. Scramble the eggs in a large bowl, and then add the sauteed veggies. Add the diced tomatoes and chees; mix nicely.

Preheat oven to 375 degrees.

Preheat your PAM sprayed omelet pan on the stove top until hot. Add egg/veggie/cheese mixture. Using a spatuala, loosen the sides of the pan as the eggs cook, to let the uncooked eggs leak down. LIne the circumference of the pan with croutons; the eggs are still wet. Add the cheese your cheese. Remove from stove top (should still be fairly wet, but solidified ! )

Put in stove for 18 minutes until nicely browned on top

Let it cool for 5 minutes. Ct into sections, like a pie....serve with toast or muffins......leftovers are GREAT cold for lunch the next day.
