Does the Catering place ever throw in extras if you have more people than you guaranteed?

some halls will add more cocktail stations almost all will add more servers and batenders.

Not sure what is done if you go over what you guarantee. I have heard of places throwing in extra items at the CH or upgrading the dinner menus if you are UNDER your guaranteed number.

My CH is
1) making vendor and children's plates 1/2 less than regular plates
2) extending reception for 1/2 hour
