Re: Looking for a Meatball Crockpot Recipe???

MEATBALLS IN TOMATO SAUCE

1 (28- to 32-oz) can whole plum tomatoes
2 garlic cloves, chopped
1 teaspoon dried oregano, crumbled
1 1/2 teaspoons salt
1/2 cup fine fresh bread crumbs
1/2 cup whole milk
1 1/2 lb meatloaf/meatball mix (mixed ground beef, pork, and veal)
1 medium onion, coarsely grated
5 tablespoons chopped fresh flat-leaf parsley
1/4 teaspoon dried hot red pepper flakes
1 1/2 tablespoons vegetable oil

Pulse tomatoes with their juice in a food processor until chopped. Simmer tomatoes with garlic, oregano, and 1/2 teaspoon salt in a 3-quart heavy saucepan, uncovered, stirring occasionally, until thickened, about 20 minutes.
While sauce is simmering, stir together bread crumbs and milk in a large bowl and let stand 5 minutes. Add meat, onion, 3 tablespoons parsley, red pepper flakes, and remaining teaspoon salt and blend with your hands until just combined well (do not overmix). Form 2-tablespoon amounts into meatballs (about 20).

Heat oil in a 12-inch heavy skillet over high heat until hot but not smoking, then sauté meatballs in 2 batches, turning occasionally, until well browned, about 5 minutes. Transfer as browned with a slotted spoon to tomato sauce.

Simmer meatballs, covered, stirring occasionally, until cooked through, about 5 minutes. Serve sprinkled with remaining 2 tablespoons parsley.

Makes 4 servings.

Re: Looking for a Meatball Crockpot Recipe???

Not a whole lot of meatball recipes in here.
How about meatballs w/ gravy?

Since you all ready have the meatballs done, I'll skip that part of the recipe
1 -can of condensed cream of mushroom soup
1 c water
1 15 or 16 ounce envelope of gravy mix
1/2 tsp finely ground lemon peel
1/2 tsp dried thyme, crushed
1 bay leaf

Put meatballs in crock.
combine the rest in a bowl & pour over meatballs.
cook on low 6-8 hrs. or high 3-4 hrs.
Serve w/ mashed potatoes or buttered noodles.
sprinkle w/ parsley.

I guess u can just modify to how ever u like

I love the appetizer meatball recipe -
1 bottle of chili sauce and a jar of grape jelly,
sounds nasty but tastes so good!

Re: Looking for a Meatball Crockpot Recipe???

Chipotle Meatball
1 1/2 to 2 pounds ground chuck or round (lean ground beef)
1/2 cup rolled oats
1/4 cup chipotle salsa or other thick salsa
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon salt
pepper to taste
1 tablespoon dried minced onion
5 to 6 potatoes, sliced about 1/4-inch thick
2 cups frozen corn kernels, or canned
1 green bell pepper, cored, seeded, and sliced
1 red bell pepper, cored, seeded, and sliced (or use roasted red pepper or another green pepper)
1 can nacho cheese soup
1/4 cup chipotle salsa, or other thick salsa

Combine first nine ingredients and form meatballs 1- to 1 1/2-inch in diameter. Melt margarine in a large non-stick skillet; brown meatballs on all sides. Place sliced potatoes in slow cooker/Crock Pot. Add corn and sliced peppers. Top with the meatballs. Combine soup and salsa in a small bowl; pour over slow cooker/Crock Pot ingredients. Cover and cook on low 8 to 10 hours.
Serves 4 to 6.
