i saved this one that someone posted the other day:
1 10oz package of chopped spinach, drained 1 can artichoke hearts, drained and chopped 1 cup of Parmesan cheese grated 1 cup of monterey jack cheese 2 tbsp on butter 2 tbsp of flour 1 cup of milk
"Slowly heat the butter until melted. Stir in the flour and give it a minute to blend and become bubbly. Take the pan off the heat and stir in the milk. Bring the pot back to a boil, stirring constantly. Add all other ingredients and mix until well blended. It was really simple and really delicious! It makes a big portion too, we still have a ton in the fridge."

i have a recipe thats supposedly the houstons one but i think its better (went to houstons last night and had it)! have at home....promise to post tonight...

sorry! i forgot to post this the other night. 2 pcks frozen spinach 1 can artichoke hearts (chopped & drained) 1 onion chopped fine 1 stick butter 1/2 tsp cayenne pepper salt & pepper to taste 8 oz philly cream cheese 8oz grated monterey jack 4oz grated mozz 4oz grated swiss 4-6oz heavy whipping cream 4 oz shredded parmesan
cook spinach drain and set aside saute onion in butter until tender combine cream & cream cheese & beat on medium mix remaining ingredients (except parm) refridgerate for 2hrs then top w parm and heat in microwave

I MADE THIS RECIPE FOR THANKGIVING AND IT WAS SO EASY AND IT WAS TO DIE FOR!!!!

Actually you can serve this w/ tortilla chips but my all-time favorite is this:
Go to the bakery and get a round bread--either regular or pumpernickel--whatever you choose--cut off the top--take all the insides out so you make it into a bowl, and pour the dip in there.
Take the insides of the the bread you just took out and cut into little squares to dip in the spinach-artichoke dip--Its Delicous!!!!

Everyone asks for this recipe:
1 cup mayonnaise 1 cup freshly grated parmesan or reggiano cheese (this is really easy to do if you have a cheese grater) 1 clove garlic minced 1 can Progresso artichoke hearts drained and cut into pieces 1 package frozen chopped spinach - drained really well
Mix everything together and put into greased pie plate or quiche dish. Bake for 30 minutes at 350. Top with chopped tomatoes and serve with pita chips, hollowed out pumpernickel, or crackers.
